So are diced tomatoes, or even a salsa or tomato sauce.

Cheers, Petepeterbronskihttps://www.blogger.com/profile/17048848527195520324noreply@blogger.comtag:blogger.com,1999:blog-4706374459042869519.post-28959037066830391072011-07-27T18:42:29.661-06:002011-07-27T18:42:29.661-06:00What would you top these pancakes with? What would you top these pancakes with?Amanda on Mauihttps://www.blogger.com/profile/07025963903013322746noreply@blogger.comtag:blogger.com,1999:blog-4706374459042869519.post-73597027312215182732011-07-26T21:32:23.999-06:002011-07-26T21:32:23.999-06:00Hi Shirley... I've made zucchini fritters from Kim's recipe at Cook IT Allergy Free before and they are similar (less egg since they are fritters vs pancakes) and were excellent. Think I'll try your (I mean Kelli's!) recipe as a side for our leftover barbecue today, Pete. Oh, and thanks for the reminder on the lighter olive oil being better for such cooking. (I had forgotten about that.)

Shirleygfe--gluten free easilyhttps://www.blogger.com/profile/08182613995248482102noreply@blogger.comtag:blogger.com,1999:blog-4706374459042869519.post-70676876356082730672011-07-22T20:19:25.236-06:002011-07-22T20:19:25.236-06:00Hi Sharon... And since you commented on the oils - we use extra light olive oil, which is not the same thing as extra virgin olive oil. Extra light olive oil has a higher smoke point, making it a good all-around olive oil that we use to make both salad dressings AND in grilling.

Hi mxjake... Thanks! I've been noticing a lot of conflicting information about what type of oils or fats to cook with and I find it all rather confusing. I feel that I've been eating much healthier but I'd hate to be ruining it all by cooking all this healthy food in the wrong oil!

SharonAnonymousnoreply@blogger.com
